SPAGHETTI AMATRICIANA
INGREDIENTS :
3 medium onions, sliced thinly. ¼ cup olive oil
1 teaspoon crushed red pepper, 1 Tbs. minced
fresh Rosemary
1 lb. smoked bacon and ½ lb. pancetta diced
2-28 oz. cans crushed tomatoes
3 cloves garlic, minced
kosher or sea salt and black pepper to taste
1 & 1/2 lbs. imported Spaghetti or other pasta
Place bacon and pancetta in a large frying pan and cook over very low heat to render fat (about 12 minutes). Do not brown or let bacon get hard or crispy.
Remove bacon and pancetta from pan and set aside. Drain all but 3 tablespoons of fat from pan. Add olive oil and onions to pan and sauté over low heat for about 12 minutes. Add garlic and red pepper, sauté for three minutes.
Add tomatoes, bacon, and pancetta. Simmer for 30 minutes. Add rosemary. Simmer for 15 minutes.
Cook Spaghetti or other pasta. Drain pasta, sprinkle with olive oil. Add sauce, mix and plate. Serve with grated Parmigiano.
