ITALIAN LEMON COOKIES
1/2 cup sugar
1/2 cup veg shortning
1 1/2 tsp. Lemon extract
2 cups flour
1 1/2 tsp baking soda
1) Cream the Sugar and Vegetable Shoring together with an electric mixer until thoroughly combine.
2) By hand, mix the eggs into the sugar mixture one at a time with a wooden spoon until each egg is thoroughly incorporated. Mix in Lemon Extract.
3) In a separate bowl, mix flour, salt, and Baking Soda together. Fold these dry ingredients into the sugar / egg mixture by hand with a rubber spatula.
4) Grease a cookie sheet with shortening. Drop a large tablespoon portions of cookie dough onto the cookie sheet, spacing about. Bake in a 375 oven for 10-12 minutes, until the cookies just start to get a slight brown ting on them, Remove from oven and let cool.
3 cups confection sugar
1/4 cup water
1 tsp. Lemon extract
Mix all these above ingredients together with a wire whip until smooth.
Once the cookies have cooled, frost them with frosting and they are ready to serve. Buon Appetito!
